Eight Treasure Pumpkin Rice method:
First soak the red beans, peanuts, and lotus seeds overnight. Soak the rice and black rice for 3-4 hours before steaming; they are easier to be soft and glutinous.
When steaming, use less water than usual, add a little oil, and steam for 30 minutes over high heat.After cooking, mix insugar
(adjust the sweetness according to your preference; you can add more if you like it sweeter).
Wash the pumpkin, cut it from the 1/4 point, and remove the inner flesh.Fill a layer of the steamed eight treasures rice, then a layer of raisins and walnut kernels, followed by a layer of red bean paste, and finally another layer of eight treasures rice.
Place in the steamer, steam for 30 minutes over high heat.
Layer steamed eight treasure rice, then layer raisins and pine nuts, then layer red bean paste, and finally top with more eight treasure rice.
5. Place in a steamer and steam for 30 minutes on high heat.
