How to Make Bone Soup Hand-Pulled Noodles

Mixing ingredients:All-purpose flour300g,Egg1 piece, salt 1-2g, warm water 105g.

  Wonton noodlesIngredients: 1 small pot of beef bone broth, 3 eggs,Broccoli florets1 small bowl,Green peas.

Seasonings: salt,black pepper,mild pure sesame oil.

1. Mix flour withfine salt,stir until combined, crack 1 egg into the flour and stir until combined. Place the mixing bowl under a dripping faucet to cut the flour into pieces with chopsticks;Knead the flour repeatedly until forming a hard dough (the hand-pulled noodles should be harder when kneaded, resulting in more chewiness), cover the dough with cling film and let it rest for about 20 minutes.

2. Knead the dough again evenly, dust some flour on the work surface, use a rolling pin to roll the dough into large thin sheets (the thickness of the sheet is according to personal preference);Sprinkle flour on the sheet, fold it, and cut it into strips, after cutting,noodlessprinkle with flour and shake to separate.

3. Bring water in a pot to a boil, add a few drops of oil and some salt, stir well, then add the hand-pulled noodles, cook until boiling again, pour cold water twice, drain the cooked noodles thoroughly, place them in a bowl, and mix with a little sesame oil.

4. Fryscrambled eggs,add green peas and broccoli florets to the pan, blanch until done, arrange them on the noodle bowl;Serve the beef bone broth that has been brought to a boil with salt and black pepper, pour it over the noodles in the bowl, and serve.
