Ingredients:
Eggplant,1 piece,
Green pepper,1/2 piece, Tofu meat 20 grams,
Rice noodles,120 grams
Seasonings: 5 tablespoons of oil, 2 tablespoons of salt, 1/2 tablespoon of chicken powder,
1/5 tablespoon of sugar,1/2 tablespoon of soy sauce
soy sauce1/2 tablespoon
Cooking Method (serves 3):
1. Wash the eggplant and remove the head and tail, cut into cubes;Wash the green pepper, remove the stem and seeds, and cut into cubes;Soften the tofu meat and chop it finely.
2. Bring a pot of water to a boil, add 1 tablespoon of salt,
add
rice noodlesand cook until boiling, add more water when bubbling, then drain and cool with cold water, place in the soup bowl.3. Heat 5 tablespoons of oil, stir-fry garlic paste, add eggplant and quickly fry over high heat until the edges soften, then add green pepper and tofu meat and mix well.
4. Add 1/2 tablespoon of chicken powder, 1/5 tablespoon of sugar, 1/2 tablespoon of soy sauce and 1/3 tablespoon of salt to stir-fry evenly, pour over the rice noodles.
