Ingredients:
Crayfish400g,
Tofu1 piece,
Rice noodles200g
Seasonings: raw ginger, chopped green onion, salt, oil, cooking wine
Steps:1 Buy crayfish and keep them in slightly oiled clean water for 3-5 days to expel the mud from their intestines
2 Clean the crayfish thoroughly
3 Heat some oil in a pot, add ginger slices, and stir-fry the crayfish lightly; then pour in cooking wine
4 Add an appropriate amount of water
5 Cut the tofu into small pieces and briefly boil it in hot water
6 Bring to a boil over high heat, then reduce to medium-low heat and simmer until the soup is thick and white

7 Drain the tofu and add it to the pot
8 Cook for another 5 minutes or so
9 Add the rice noodles
10 Once the noodles are soft, taste and adjust seasoning with chopped green onion

Boil the noodles.
Once the noodles are soft and cooked through, season to taste and sprinkle with green onions.
