How to Make Spicy Braised Beef Noodles?

Spicy Braised BeefBeefRice Noodles
The cool autumn weather calls for a bowl of noodles to warm you up, this spicy braised beefNoodle Souphas particularly flavorful broth with rich aroma, the noodles are chewy and satisfying.
Main ingredients:
Rib Meat1000 grams, bamboo shoots 1 stalkRice Noodles(raw) 200 gramsBok Choy3 stalks
Ingredients:
Garlic 2 heads, rice wine 1 tablespoon, Doubanjiang from SichuanSauce3 tablespoonsFennel Seeds5 gramsCinnamonBark 5 grams, Chinese Black Soybean Paste 2 tablespoonsOldGarlicpieceDark Soy Sauce2 tablespoons, Cardamom 2 pieces, Cloves 5 pieces, Cinnamon Balls 3 piecesStar Anise2 pieces, plant oil as needed
Steps:
1. Soak the rib meat in clear water to removeBloodwater, wash and cut into small pieces.



2. Boil the water until it boils, then add the beef and let it boil for a few minutes, then remove and rinse with warm water to remove foam.


3. Slice one piece of ginger into large slices, peel two heads of garlic



4. Spices: cinnamon 2 pieces, star anise 2 pieces, cinnamon ball 3 pieces, cardamom 3 pieces, fennel seeds, cloves



5. Heat oil in a pot, lower the heat and add ginger, garlic, and all spices to stir-fry until fragrant.



6. Then increase the heat and add 3 tablespoons of Sichuan Doubanjiang sauce and 2 tablespoons of Chinese Black Soybean Paste to fry until red oil is released.

 
7. Add the beef and stir-fry, then add 2 tablespoons of dark soy sauce and 1 tablespoon of rice wine and stir-fry evenly before adding sufficient boiling water, boil and remove foam (remember it must be boiling water).



8. Transfer to a clay pot, simmer on low heat for 1.5 hours.9. Peel the bamboo shoots, blanch them, then slice diagonally.10. After 1.5 hours, add sliced bamboo shoots and season with salt and oyster sauce as per taste, continue to cook for another 20 minutes before removing from heat.



11. Finely chop scallions and cilantro



12. In a bowl, mix cilantro and scallion ends, add beef broth

 
into the bowl.Bok Choyand finely chopped coriander in a bowl with hot beef broth.



Rice Noodlesare ready, remember to use alkaline noodles for the best taste and texture.13. Boil water separately and cook the noodles, blanch bok choy in the cooking liquid of the noodles.



14. Transfer cooked noodles onto a bowl, add blanched vegetables, and large slices of beef; your spicy braised beef noodle soup is ready.

1. The broth I made for this red-braised beef is quite rich, so no need to add more water, just pour it over without any additional seasoning.
