Preparation: marinate the fish head with cooking wine and fine salt for 10 minutes.Cut the tofu into small cubes, smash the garlic cloves, cut the scallions into segments, slice the ginger,
red pepperslices

Steps:

1. Heat a pan, add 1 tablespoon of oil and heat it up, then add the drained tofu pieces and slowly fry them on low heat.
2. Stir occasionally with a fork to ensure all sides are golden brown.
3. In another heated pan with dry-fried fish head, add ginger slices and fry on low heat until done.
4. After frying one side, flip the fish head over and continue cooking until both sides are golden brown, then add water and bring to a boil.
5. Add the fried tofu and all seasonings, cook at high heat until boiling, then reduce to low heat.
6. Add scallion segments and thicken with cornstarch, serve in a dish and garnish with red pepper slices.
