1 Clean the river croaker fish and cut it into pieces. Let it air dry or use kitchen paper to absorb moisture. Finely chop ginger and garlic.2 Heat oil in a wok, coat each piece of fish with a thin layer of starch.
3 Fry both sides of the fish until golden brown. Turn over when one side is done.
4 Add a little oil to the same pot, then add dried chili peppers, Sichuan pepper, garlic and ginger, stir-fry on low heat until fragrant, followed by adding Sichuan bean paste, continue stir-frying until fragrant.
5 Add the pieces of fish, stir-fry for a few seconds, then add an appropriate amount of water.
6 Pour in some soy sauce and sugar, simmer over medium-low heat for about ten minutes. Then increase heat to reduce the sauce.
Cooking tips:
1 Dry the surface of the fish well before frying; this prevents sticking.
2 When frying the fish, ensure one side is done before turning it over; otherwise, the skin may stick to the pan.
Attention:
1 Make sure to dry the skin of the sole thoroughly before frying, whether by air-drying or wiping, otherwise it will stick to the pan.
2 When frying the sole, ensure you cook one side well before flipping, otherwise the skin is likely to stick to the pan.
