Detailed method for making white-cut chicken

Ingredients:

A young rooster,Ginger paste 5 grams,Green onion strips 5 grams,Fine salt.5 gram,PeanutsOil 6 grams.

Preparation:

1 Divide the scallions and ginger into two small dishes, mix with fine salt.Using mediumfire,heat a wok, add oil until it's slightly boiling, remove and pour over the two small dishes for serving.

2 Clean the chicken thoroughly, boil in water, lift out twice to change the water inside the cavity, maintaining consistent internal and external temperature.

3 Let it cook for about 15 minutes until done. Use a hook to lift it out, then immerse in cold water, remove the down feathers and yellow film, and take out immediately.

4 Dry the skin, pour on some heated peanut oil, cut into small pieces, and arrange to form a chicken shape on a plate.Serve with ginger paste and green onion strips.
