Main Ingredients: Fresh and plump old hens (about 1500 grams)

Preparation:
1) Kill the hen, remove the feathers, clean it thoroughly. Remove its head and feet, put it in a pot with water and cook over high heat until boiling, then remove foam, add old ginger and goji berries (wrapped in white gauze);
2) Transfer to an earth oven and simmer on low heat for 4 hours (3 hours for young hens), then remove,
