Ingredients:
Lean Pork
150g, 100g of fatty pork belly, 4 green peppers, 8 cloves of garlic, 6g salt,Chicken Essence
6g, 5ml rice wine, 5ml old soy sauce, and an appropriate amount of cornstarch.Steps:
1. Clean all ingredients, drain them thoroughly, and set aside for use.
2. Slice the lean meat, mix with 2g salt, 2g chicken essence, 5ml rice wine, 2ml old soy sauce, and an appropriate amount of cornstarch; mix well and marinate for about 5 minutes.
3. Cut the fatty pork belly into slices, slice the garlic cloves, wash the green peppers, halve them lengthwise, then cut them into long strips and set aside.

4. Heat oil in a cold pan until it reaches about 60% hotness; add the fatty pork belly slices, stir-fry repeatedly until some of the fat is released, turning them golden brown.
5. Without removing the pork belly from the pan, immediately add the sliced peppers and garlic, season with 4g salt and 4g chicken essence, and continue stir-frying for about two to three minutes.

6. Lastly, add the marinated lean meat slices, lightly stir for another half minute, then add a bit more old soy sauce (3ml) before removing from heat and serving in a dish.
