The method:
1 Porkloinis sliced into large pieces, about 2-3 millimeters thick; do not slice too thinly, or they will become dry when fried;
2 Scallion,ginger,cilantro,carrotare cut into thin strips,sugar,white vinegar,soy sauce,and salt are mixed to make a dressing;3 A batter of water starch and a little egg white is prepared so that the meat slices can be coated evenly but not too thickly;4 When the oil in the pot is heated to about 150-180 degrees Celsius, the meat slices are fried one by one until cooked through, then removed;
5 The heat is increased and the fried meat slices are returned to the hot oil and fried until crispy and well-colored; I prefer a slightly softer texture than what is typically achieved in restaurants, which usually aim for a more crisp finish;
6 A small amount of oil left in the pot is used to stir-fry the scallion, ginger, cilantro,
carrot
strips.7 The fried meat slices are added and stir-fried evenly; then the dressing is poured over them and quickly stir-fried before serving.Gently stir-fry the threads evenly;
7. Add the fried meat slices, stir-fry evenly, pour in the sauce, and quickly stir-fry until cooked before serving.
