How to Make Northeastern Pot/Stove Fried Meat

Northeastern kebab meat is famous near and far, crispy on the outside and tender on the inside, with a sour and sweet taste.Traditional kebab meat has an appropriate amount offlouradded to the batter, making it crispy and fluffy in texture. The use of old soy sauce is reduced, resulting in a lighter color, and the sugarvinegarsauce follows the father's teachings for a harmonious sour and sweet taste, particularly delicious.
Ingredients:
porktenderloin150 grams, green onions,gingerstrips as needed
Marination:
egg white 1/2 piece, rice wine 1 teaspoon, salt 1/2 teaspoon
Batter:
cornstarch 3 tablespoons, flour 1 tablespoon, water as needed
Sweet and Sour Sauce:
sugar 2 tablespoons,rice vinegar1 tablespoon, light soy sauce 2.5 tablespoons, a little old dark soy sauce, a bit of salt,chicken essenceas needed, water 6 tablespoons, starch slurry 1 tablespoonSteps:
1. Cut pork tenderloin into slices about 0.2 cm thick.
2. Place the meat in a container, add marinade and mix well by hand; let it sit for 15 minutes with salt.
Mix all sugar vinegar sauce ingredients in a small bowl to prepare.Batter ingredients mixed into a bowl, gradually adding water until the batter has a thick consistency similar toyogurt.3. Heat approximately 500 grams of vegetable oil in a pan and wait for it to be about 6-70% hot.
4. Once the oil is at the right temperature, dip marinated meat slices in batter one by one and fry them in the hot oil (test the oil temperature with a small piece of scallion if unsure; it should sizzle loudly and form dense bubbles around the scallions).
5. After the batter on the meat sets, immediately remove the pieces.
6. Heat up the oil again until about 80% hot and deep-fry all the meat slices in one go.
7. When the meat turns golden brown, quickly remove it from the oil to drain excess fat.



8. Pour out the oil from the pan, leaving a small amount of oil on low heat.
9. Add sugar vinegar sauce to the warm oil and simmer until thickened.
10. Over high heat, add fried meat slices into the sweet and sour sauce.
11. Quickly stir-fry with green onions and ginger strips.
12. Remove from heat and serve.
Serve on the plate.
