Put the tofu in a large bowl and mash it. Add the egg, cornstarch, salt, sugar, and shiitake mushroom powder; stir well in one direction.
Boil half a pot of water in a wok. Use a small round spoon to form the tofu mixture into balls and drop them into the boiling water without stirring. Let the balls float up on their own.
