1. Clean the carp, dry it off, and make several cuts on both sides;Cut the tofu into appropriate-sized cubes;Slice the ginger, chop the garlic, tie up the green onion;Lightly coat the carp's two sides with a thin layer ofcornstarch,heat some oil in a pan until hot, then fry both sides of the carp until slightly golden and place it on a plate to set aside;

2. In the same pan, heat some oil, add the ginger slices and garlic, stir-fry for a moment before adding the Shichuan fermented bean curd paste, stir-fry until soft, then add 2 cups of water, and place the carp in the soup;

3. Pour an appropriate amount of cooking wine, a little vinegar, and fresh flavor soy sauce along the carp's body;

4. Add a small amount ofsugar,largefire burnup after adding the tofu on both sides of the soup; remember not to frequently stir the tofu (it is easy to break) but rather gently shake the pan or lightly flip it;

Keep the vinegar to a minimum

1. The thin layer of cornstarch on both sides of the carp helps prevent the skin from breaking and sticking to the pan during frying.2. 5. You can omit the coriander and use chopped green onion as an alternative to add fragrance.
