Method:
1 Preparemutton/pork belly by washing and slicing, blanching briefly in boiling water for later use; clean and slice thecarrot, prepare other ingredients;
2 Heat oil in a pan, stir-fry spring onions and garlic until fragrant, then add mutton/pork belly and stir-fry. Add water and seasonings, stir evenly, cover and simmer. When the mutton/pork belly is about 80% tender, addcarrot, bamboo shoots, and continue to simmer until the meat is very tender and easy to chew. Drizzle with a bit of sesame oil, garnish with green onions before serving.
