According to Director of the Ministry of Agriculture and Forestry, Mr. Li Cangrang, this year's mango yield has increased by 40% compared to last year, making prices more affordable and attracting many people to purchase them. The popular 'Aiven' variety, known for its small seed, tender flesh, and fine texture, is considered a premium choice but the peak season will only last another ten days, so it's advisable to enjoy it at its best; otherwise, one would have to wait until next year.

To allow people to fully savor the deliciousness of mangoes while replenishing energy in the sweltering summer heat, the Ministry of Agriculture and Forestry has developed light dishes such as mango rice burgers and mango sushi, which are both tasty and low in calories.

[Mango Rice Burger]

For 4 servings

Ingredients:4 rice burgers, half a lettuce head, one cucumber, one tomato, two mangos, mayonnaise to taste, four cheese slices.Preparation steps:1. Cut the lettuce leaves, cucumbers, and tomatoes into slices; slice the mangoes, removing the skin and cutting them into approximately 0.8-1 cm thick slices.2. Spread mayonnaise on both sides of each rice burger bun. Layer with the lettuce, tomato, cucumber, cheese, and mango slices in that order.[Mango Sushi]For 4 servingsIngredients:

mango sushi rice

5 cups, 4.5 cups of water, one mango, two cucumbers, half a pound of seasoned pork flakes, four sheets of seaweed.

Sushi vinegar

300 ml, 7 g salt, 200 g sugar.

Preparation steps:

1. Cook the sushi rice according to instructions and mix in the sushi vinegar once it's hot but cooled down completely.2. Lay out the rice on the seaweed sheet and spread seasoned pork flakes evenly over it.3. Place cucumber strips and mango strips in the center of the rice.4. Roll up from the bottom, then slice to serve.Slice 4 pieces.

SushiRice vinegarSorghum300 ml of rice vinegar, 7 g of salt, 200 g of sugar.

Method:

1. Boil the sorghum vinegar, sugar, and salt until the sugar dissolves to make sushi vinegar.

2. Cook the sushi rice with water, then mix in the hot sushi vinegar thoroughly while it's still warm, and let it cool completely.

3. Spread the cooled sushi rice onto nori sheets, and evenly distribute seasoned pork floss on top of the white rice.

4. Place small strips of cucumber and mango in the center of each roll.

5. Roll up starting from the bottom end, then cut into slices to serve.
