3 When mixing the yolk mixture with fresh cream,it must be cooled down before mixing.(Cool the yolk mixture to around 38 degrees, which should feel cool when touched by hand, before proceeding with the mix.Fresh cream is heat-sensitive; if hot liquid is poured into it, the cream will quickly melt.4 After pouring into the mold, gently tap the mold on the table to level the mixture.
This helps in eliminating air bubbles, ensuring a smooth surface for the mousse.Then place it in the refrigerator for chilling or freezing; allow about 3 hours before unmolding.(1) Chilled storage can last up to 3-7 days.(2) Frozen storage can last up to 10 days but avoid repeated thawing.(3) For chilled storage, use a sealed container or wrap with plastic film to prevent drying and refrigerator odors from affecting the cake.(4) If left out for too long, make sure to chill before consumption if the cake has become soft.Afraid of heat, if hot liquid is poured into cream, the cream will quickly melt.
4 After pouring it into a mold, it's best to gently tap the mold on the table to level it off.Using vibration helps release air bubbles, making the mousse smoother.Then place it in the refrigerator for chilling or freezing. It should be removed after about 3 hours.
