How to Make Scallion Oil Pasta Sauce

  Scallion OilIngredients for Stir-fried Noodles:

Fresh hand-rolled noodles, white part of green onions, spring onions, garlic cloves, meat slices.

  Preparation of Scallion Oil Stir-fried Noodles:Seasonings:

Oil,soy sauce,sugar,rice wine,MSGor water.

1. Cut the white parts of green onions into threads, spring onions into segments, and flatten the garlic cloves then slice them.

2. Pour oil into a pan, turn on low heat, add onion white threads, spring onion segments, and garlic slices; fry slowly until the onion whites become translucent and the spring onion turns dark brown (this process requires low heat and takes a long time.

Maintain the oil at its initial temperature without letting it smoke;3. Remove the spring onions.

Pour the oil into a bowl and set aside;4. Meat in Soy Sauce: Leave some scallion oil in the pan, switch to high heat.

Add meat slices and stir-fry until they turn white; add 2 tablespoons ofdark soy sauce,1/2 tablespoon of light soy sauce,1 tablespoon of sugar,1 tablespoon of rice wine, a little chicken stock or water to make a sauce; once the sauce thickens, turn off the heat and add a small amount of MSG;5. Cook fresh hand-rolled noodles until slightly firm.

6. Drain the cooked noodles and mix in 1 tablespoon of scallion oil, stir-fry evenly, then pour over the meat sauce, and sprinkle with chopped spring onions.

Drain the cooked noodles and dry them, add 1 tablespoon of green onion oil, mix well, and pour on the soy sauce meat strips, then sprinkle with chopped green onions.
