Seasonings: One portion of Old-brewed BrothSichuan PepperSalt, Chinese Prickly Ash SeedChili SugarDark Soy Sauce, Oyster Sauce
How to Make Old-brewed Tofu Sheets
1. Prepare an appropriate amount of tofu sheets for use.
2. A portion ofbraising liquid.
3. Fold the tofu sheets into square blocks and prepare them accordingly.
4. Adjust the old-brewed broth with additional seasonings based on usage.
5. Place the folded tofu sheets in a pot, along with a few eggs.
6. Pressure-cook for 10 minutes.
7. The cooking process is complete once done; however, the flavor may still be insufficient at this point.
8. You can let it soak longer. I generally leave it in without removing, storing it in the refrigerator and reheating before consumption when needed.
When serving, you can slice or eat directly, drizzled withsesameoil for an enhanced flavor.
The water used to braise legumes should not be reused for meat; there is no need to preserve it.
