吴忠白水鸡
简介
白水鸡是宁夏最为著名的清真风味小吃之一,全区各地均有制作。吴忠白水鸡尤以吴忠一带选料考究,制作精细,颇享盛名。看上去色泽黄亮, 闻起来清香扑鼻,吃起来味道醇厚,鲜嫩爽口。
做法
用老汤(即经常煮白水鸡的汤)加清水,还有调料包,把母鸡放入锅内,先用旺火烧开,再用文火慢炖。待鸡肉煮熟(以能用筷子扎进鸡肉为宜),捞出晾凉,再取鸡油抹遍全身,使鸡皮发亮。吃时将熟鸡带骨剁成5厘米方块,码在盘里,配上三花油一小碟上桌。看上去色泽黄亮,闻起来清香扑鼻,吃起来味道醇厚,鲜嫩爽口。
