敦煌酿皮子
简介
敦煌酿皮子,有的黄亮滑爽,有的洁白如玉,拌上特殊的佐料后,其味辣凉,柔韧爽口,食用方便,味美价廉,是历史悠久的民间快餐。酿皮子是一种麦面制品,制作工艺极易掌握。
做法
先将优粉加水和匀,然后将面团置入清水中翻搅抓揉,使面粉中的淀粉与蛋白质充分分离。溶解于水的面浆,便是加工酿皮子的成料了。在水滚沸后,将面浆舀入一个铁皮圆盘中涂匀,放入开水中蒸煮一分钟,便成了酿皮子。然后将圆形的酿皮切成细长条,放几片面筋,加一点芥茉、蒜汁、辣椒、酱油和香醋便可食用。
