简介
川味炸春卷,炸点,特点:色泽金黄,皮酥脆,馅鲜嫩。烹制法:炸。
川味炸春卷的做法:
1、鲜猪瘦肉切成火柴棍细丝,韭黄洗净切短节。
2、猪肉丝用盐、料酒、水豆粉码味,入油锅炒熟,加韭黄、绿豆芽拌成馅。
3、面粉加鸡蛋、水豆粉、盐少许调成稀糊状,下锅摊成薄圆皮。
4、将圆皮缝中划十字刀成四瓣,每瓣包入馅心,将两头抄拢裹成圆筒,接头处用蛋浆粘好,入菜油锅内炸成金黄色即成。
操作要领:蛋皮不能摊得过厚;接头要粘牢。
