芝畔烧肉
简介
芝畔烧肉,是安丘市的特色美食,产于安丘临浯镇芝泮村。其主料是猪头和猪肠、肚、蹄、心、肝、肺等,采用明朝宫廷膳食秘方,添加20多种中药,经洗、揉、煮、熏、烤等多道工序加工而成,距今已有600多年的历史。
制作时,先用细盐轻搓几遍,然后放入原汤锅中,煮两小时左右,煮时放入用纱袋包好的豆蔻、砂仁、肉桂、八角、茴香等佐料。煮熟的肉捞出,放在锅内箅子上,加糖熏烤即成。
