Ingredients:
750g fresh green mung beans in pods.
Seasonings:
2 bay leaves,1 star anise,1 small piece of Sichuan peppercorns, 1 tablespoon of salt,1/2 tablespoon of white sugar, 3 tablespoons of cooking wine, fresh1 bunch of scallion, 5 cloves of garlic,ginger, 5 slices,5 dried red chilies, 1 small piece of cinnamon, 1.5L of water.Preparation:1. Rinse and drain the green mung beans. If you want the beans to absorb the flavor quickly, cut a small hole in each end.2. Chop the scallion, and rinse the bay leaves, star anise, Sichuan peppercorns, and dried chilies with a little water.Instructions:1. Pour 1.5L of water into a pot and add the green scallion, chopped scallion, garlic cloves, ginger slices, bay leaves, star anise, Sichuan peppercorns, dried chilies, cinnamon, cooking wine, white sugar, and salt.2. Bring the pot to a boil over high heat, then continue to cook for about 5 minutes to allow the seasonings to fully infuse. Then add the green mung beans and cook for 10 minutes without covering the pot.
3. After cooking, don't immediately remove the beans. Let them soak in the broth for about 5 minutes, then remove and serve. You can eat them hot or chilled.
Wash and drain the green peas, and if desired, cut a small hole at each end of the peas to help them absorb flavor more quickly.
Chop the fresh garlic chives, and rinse the star anise, cinnamon, Sichuan peppercorns, and dried chili peppers briefly.

2. Bring the pot to a boil over high heat, then continue to cook for about 5 minutes to allow the seasonings to fully infuse, then add the peas and cook for another 10 minutes without covering the pot.
