老北京炸酱面的家常做法
食材准备
切面200克,肉馅50克,鸡蛋1个。水发香菇丁少许,鲜汤2杯半,植物油、甜面酱各2大匙,东北大酱、酱油各1大匙,料酒、白酒各半大匙,味精、香油各少许。
方法步骤
1.切面放入沸水锅中,加少许精盐,煮约10分钟至熟,捞入面碗内,再注入煮沸的鲜汤。
2.炒锅上火烧热,加适量底油,先将鸡蛋打散,下锅炒熟盛出,再下入猪肉馅煸炒至变色,放入调味科以及炒好的鸡蛋。
3.用旺火快速翻炒入味,见酱汁浓稠时,出锅装入面碗即可。
