soak and wash shimeji mushrooms, remove the stem and cut into slices;wash and cut winter bamboo shoots into pieces.2. Heat the pot, put the flathead fish in and slightly fry, then remove and drain.

3. Keep the bottom of the pot, add ginger slices, garlic cloves, star anise, and dried chili to flavor, then add salt, soy sauce, wine, white sugar, vinegar, and an appropriate amount of water, add the flathead fish, shimeji mushrooms, and bamboo shoots and simmer until cooked, and sprinkle with green onion slices.

Clean and dry the flatfish;Soak and clean the shiitake mushrooms, remove the stems, and slice;Wash and dice the winter gourd.
