Steam forapproximately 8 minutes;3. Add the pumpkin to boiling water and blanch for 1 minute to par-cook;
4. Mash the steamed duck egg yolk while it's hot;
5. Heat oil in a pan, add scallions and stir-fry until fragrant, then add the pumpkin and stir-fry for a moment;
6. Add the mashed duck egg and a small amount of salt, stir and season to taste.
Tips:
Do not blanch the pumpkin too much, as it will easily turn into pumpkin puree.
