Braised Duck with Yam Tofu

IngredientsPreparation
Duck meatYam tofu, 5g salt, 5g scallions,Ginger5 slices, 3 cloves of garlic,Star anise10 grains, 5g of cooking wine,Soy sauce5g, 5g of cornstarch,Doubanjiang (fermented bean paste)1 tablespoon, water as needed, 2 tablespoons of vegetable oil.Method
1. Wash the duck, cut into pieces. Wash the yam tofu, cut into thick strips. Wash the garlic, slice it; peel and slice the ginger; wash the garlic and cut it in half; place in a pot with appropriate amount of water, bring to a boil over high heat.
2. After boiling, remove and wash. Then, change the water in a new pot and boil again, to completely remove the fishy smell of the duck. Remove and set aside.3. Add appropriate amount of vegetable oil to the pot and heat to about 50% hot. Add the duck and stir-fry until golden brown, then remove and set aside.4. Leave the oil in the pot, add star anise and doubanjiang, stir-fry to release the aroma, add enough water and bring to a boil. Remove the star anise.
5. Add the stir-fried duck, yam tofu strips, ginger slices, garlic slices, and appropriate amount of cooking wine and soy sauce.
6. Cover the pot and bring to a boil over high heat, then reduce the heat and simmer for 1 hour.
7. Add salt and scallions, thicken with cornstarch.
Yam Tofu Stir-fry
Ingredients

Method1. Slice the yam tofu, chop scallions, ginger, and garlic. Blanch in boiling water to remove alkaline flavor.2. Rinse with water, add to a wok, add scallions, ginger, and garlic to sauté. Add doubanjiang and stir-fry.

Yam Tofu Braised in Sauce
Ingredients
200g yam tofu, 1 tablespoon of sweet bean sauce, 1 scallion, 2 cloves of garlic, 1 slice of ginger, 1 tablespoon of cornstarch, salt, sugar,
Soy sauce.

Method
1. Chop garlic, slice ginger, and cut scallions diagonally. Cut the yam tofu into small cubes and place in a pot of boiling water to blanch, then remove.2. In a bowl, add salt, sugar, and a little soy sauce, and mix with cornstarch.3. Heat oil in a wok, add yam tofu and stir-fry.
4. Heat the oil in the wok, add ginger and garlic to sauté, then add sweet bean sauce and stir-fry.

Tips
When sautéing ginger, garlic, and sweet bean sauce, use low heat to avoid burning.
Heat oil in a pan, sauté ginger and garlic until fragrant, then add sweet soy sauce and stir-fry.
Add the yam and tofu, plus green onion segments, and pour in the seasoning sauce to stir-fry.
