Selecting Pork Trotters

1. When choosing fresh trotters, try to select those that are close in color to the meat. Avoid those that are too white, too dark, or have an irregular color.
2. Smell the trotters. Fresh trotters should have a meaty smell. Avoid those that have been treated with chemicals, or smell rotten or have a strong, unpleasant odor.
3. It's best to choose trotters with tendons. Trotters with tendons are not only delicious but also rich in collagen.
This not only makes them nutritious but also good for your skin.Preparing the Trotters1. If you don't want to experience the fun of cutting the bones yourself, have the vendor do it for you.
2. The fur on the trotters can be removed by
burning. If you accidentally burn them, scrape them off;
3. Place the trotters in a pot of cold water and boil them to remove the blood and impurities.This makes them cleaner.Braised Pork Trotters Recipe
