How to make slow-cooked free-range chicken with winter melon:

1. Clean the free-range chicken and cut it into large pieces; slice the ginger and soak the goji berries in water then wash them clean.

2. Put the free-range chicken in cold waterto cook,in a large pot, over high heat,boil until the water comes to a boil, then switch to low heat, remove any foam that rises to the surface, add ginger slices and cooking wine, continue simmering for 1 hour on low heat.3.
