1. Remove the lotus root from the caltrops and peel it; wash and cut into round thin slices, blanch in boiling water for 3 minutes, then remove and drain;


2. Mix chili powder, salted pepper,white pepperpowder, black pepper powder, starch, and white sesame seeds evenly after blanching the lotus root slices, coat them with the mixture evenly;

3. Heat oil in a wok over medium-high heat until six-tenths hot, then switch to low heat, fry the coated lotus root slices for 2 minutes; once they turn golden yellow, remove and place on paper towels to drain excess oil;4.
