Sautéed Peach Kernel Duck Slices:
First, clean the duck breast and cut it into square pieces. Place them in a bowl and add a bit of salt, one spoon of cooking wine, some scallion-ginger water, an egg white, mix well, then add two spoons of cornstarch, mix again, and pour in one spoon of scallion oil.
Second, heat the wok with oil until it's five-tenths hot, then fry the marinatedduck meat,until fully cooked. Remove when the duck pieces turn golden brown and set aside to cool.
