Yellow croaker comes in large and small varieties.Both are known alongside hairtail as China's three major marine products.They primarily come from the East Sea and South Sea, with the most abundant production in Zhoushan Archipelago and Nan'ao Island in Guangdong Province.Large yellow croakers have a peak season in October off the coast of Guangdong, December to March in Fujian, May in Jiangsu and Zhejiang.Large yellow croakers are similar in appearance and flesh quality to small yellow croakers.Large yellow croakers are larger with smaller scales, a large and round mouth;large yellow croakers have longer and narrower tail bases, fewer spines, thick and firm flesh that easily detaches from the bones.
