1. Cut the lamb loin into thin slices measuring 3 cm in length and 2 cm in width, marinate with sweet bean sauce and 15g of wet starch, mix well and set aside.
2. Mix together ginger juice (made by soaking ginger pieces in hot water), old soy sauce, soy sauce, vinegar, rice wine, sugar, and 10g of wet starch to make a sauce.
