Method for making spicy and numbing peanuts:

1. Boil an adequate amount of water in a pot, once the water boils, immediately pour in all the peanuts; after 30 seconds, when the peanut skin wrinkles, quickly remove them, then peel off each piece of skin by hand.

2. Rinse the dried chili peppers with water and shake off any excess moisture, then cut them into strips.

3. In a dry cold pan (never use cooking oil), add peanut oil, then add in peanuts and stir-fry over medium-low heat while continuously stirring until the color of the peanuts darkens and they give off an aroma; when you can hear a light crisp sound upon stirring, remove from heat and let cool.

4. In the remaining 1 tablespoon of oil left in the pan, allow it to cool down, then add Sichuan pepper and stir-fry until fully coated with oil. Turn on low heat, stir-fry the chili peppers until fragrant, then add in the fried peanuts, along with salt, cumin powder, fine chili powder, and five-spice powder. Continue cooking over low heat for 1 minute before finishing. For better flavor, seal and store for 2 days.
