Fried EggCarpSoup's Method:Steps to make the soup:

1 Bunch up the spring onions, cut the ginger into strips, peel the garlic cloves, and cube the tofu;

2 Heat oil in a pot, crack the eggs into it, fry both sides until golden brown, then remove them for later use;

3 Add the Chinese Crucian Carps to the same oil used for frying the eggs, fry both sides until the skin is golden,Skinand at the same time stir-fry the garlic cloves and ginger strips.

4 Once the carp is fried until golden brown, add in boiling water and cooking wine;Add in the tofu and the fried egg balls;Turn to medium heat and let it simmer for about 8 minutes till the soup turns creamy white;Drizzle with sesame oil, season with salt;Place in the spring onion bunches then turn off the heat and serve.
