1. Wash the duck, drain the water.
2. Massage the duck.
3. Chop the duck meat into large pieces, cut the scallions into segments, and slice the ginger.4. Heat the pot, add the duck chunks and stir-fry over high heat until the moisture is dried up.5. Drain out the fat from the duck.6. Add a little oil left by the duck, sauté the scallions, ginger, dry red peppers, star anise, and dark soy sauce until fragrant.
7. Pour in the beer just enough to cover the duck pieces.
8. Add sugar and bring it to a boil over high heat, then reduce to medium heat and simmer slowly.
9. Reduce the soup to half, season with salt, and continue to cook on high heat until thickened.
10. Garnish with scallion segments before serving.
