How to Make Ice Cream Éclairs?

Ingredients:Butter50 grams, 100 ml water, 1/4 tsp salt, 60 grams low flour,Eggs2 pieces,Ice creamAs needed
Steps:


1. Sift the low flour and set aside. In a small pot, melt the butter, add salt, and water, then heat over medium fire until it boils.


2. Remove from heat, add low flour, stir quickly to incorporate all ingredients into a dough.


3. Return to low heat, cook until most of the liquid is absorbed with a layer of film at the bottom of the pan.


4. Remove the dough and place in a bowl, continue stirring until it's warm but not hot enough to touch.(around 60 degrees)





 
6. Scoop the dough with a wooden spoon; it should form an inverted triangle that doesn't drip easily.
7. Transfer the dough into a piping bag and pipe out circles on a baking tray.
8. Use a fork dipped in cold water to press down the peaks at the top of each cookie.
9.Preheat the oven to 200 degrees for 25 minutes.10. Remove from the oven when cooled enough to handle, and use a long nozzle to fill with ice cream.
10 Remove when cooled and not hot, use a long nozzle to pour in the ice cream.
