Crispy Apple Cookies~
With school starting soon, furnitures still not bought, moving date yet to be decided, scholarship also not here. So much to worry about! Plus my friend's oven is small and didn't work well, so I haven't DIYed for a while. Today at home with half a block of butter in the fridge, won't be bringing it when moving. No point wasting food!

Actually, cookie recipes are quite similar - just cream the butter and sugar, add flour and mix until smooth, then bake for 10 to 20 minutes. These apple cookies are very fragrant and crispy. If you prefer a crisper texture, use whole egg instead of egg yolk.

Ingredients (about 12 pieces)

1 One apple, butter as needed, 1 tablespoon of brown sugar, 1/2 teaspoon of rum

2 9 tablespoons of flour (I used low flour), 3 tablespoons of butter (approximately 43 grams), 1/4 cup of brown sugar, one egg yolk, baking powder 1/4 teaspoon, a little bicarbonate of soda

Steps

1 Peel and core the apple, then cut it into small pieces. Preheat oven to 350F (175C)

2 Put butter in a small pot, cook over medium heat until melted. Add sugar and apple pieces, stir-fry until water is released and evaporated. Add rum, continue cooking on low heat for about 5 minutes until the apple pieces are slightly sticky

3 Apple pieces should be baked in the oven for about 10-15 minutes, then take out to cool down

4 Beat butter and sugar together, add egg yolk and mix well. Add cooled apple pieces and mixed flour, baking powder, and a little bicarbonate of soda, stir until evenly combined

When I bought a small oven, it was very simple but small.I had high hopes for it, hoping to make things only possible with big ovens. And so, it baked bread, potatoeschicken wings, pizzasand finally did not disappoint me.This Saturday, I used the small oven to bake some cookies! The steps are familiar (actually, I memorized them from a recipe book),butter;eggs;no baking powder, so I just used self-rising flour,
I found a can of coconut jam bought in Hangzhou and decided to add it.Nuts should be added, but all that was left were some broken pistachios.....Start making!1. Take half of a 125-gram block of butter and let it soften at room temperature.2. Meanwhile, peel the nuts. It took me so much effort that my hands hurt.3. Mix the softened butter with an electric mixer until creamy.4. Add sugar gradually and mix thoroughly.5. Beat one egg well before adding it to the butter mixture, then stir.6. Add three tablespoons of coconut jam, stir.
7. Add pistachios, stir.
8. Add self-rising flour, mix until evenly combined.
I used a measuring cup from my rice cooker and about one full cup could make 20 cookies.
9. Cover the dough with plastic wrap, shape into a long strip.
Place in the refrigerator to chill for an hour. After an hour, you will notice it has hardened slightly.Prepare baking tray and place a layer of aluminum foil on top. I cut pieces directly from the dough first but found them not visually appealing. So I used spoons to scoop out cookies and push them onto the tray with another spoon. This way they came out round. In the end, I simply took small portions of the dough, shaped into balls by hand, then placed on the baking tray.
Look at what a mess I made... making cookies in three different shapes! Don't laugh at me... By the way, since they expand when heated, make sure to leave some space between them.
I baked for 10 minutes and got golden-brown with slight cracks on top.
Take out and let cool on a cutting board. They look like cookies now and taste great too!
Unfortunately, my baking tray was small so I had to bake three batches of 20 cookies each.Taste-tested by mom while driving, she loved the smell.
This little oven... I'm really quite satisfied with it.Place the dough in the refrigerator to ferment for 1 hour. After an hour, take out the dough; you will find it has become slightly harder.Prepare a baking tray, I placed a layer of aluminum foil on it. Without a mold, I first cut a piece directly onto the tray with a knife, but found it looked not so good, then I used a spoon to scoop some out and pushed it onto the tray with another spoon, making it round. Later, I just took a small piece in my hand, moistened it with water, shaped it into a ball, and placed it on the tray.Look at me, three different shapes for cookies... Don't laugh at me, everyone... By the way, because of expansion when heated, there should be some space in between.I baked them for 10 minutes; the surface turned golden with slight cracks.Take them out and let them cool on the cutting board. They are just like cookies now, really good tasting.
Unfortunately, my baking tray is too small, I had to bake it three times to finish about 20 of them.I took some to Mom; she's smelling the bag while driving, so fragrant.Hmm, this little oven, this little guy, I'm really quite satisfied with you, hahaha...
