Ingredients:
15 ml vegetable oil,15 ml butter,1 head of garlic, minced, 4 green onions, minced,2 small fresh red chili peppers, minced,5 grams lemongrass, minced,Chicken broth505 ml,Pumpkin465 g, peeled and diced,
Milk coconut, 355 ml,
1. In a medium pot, heat the oil and butter over low heat.Sauté the garlic, green onions, chili peppers, and lemongrass until fragrant (be careful not to burn the garlic).Add the chicken broth, coconut milk, and pumpkin; bring to a boil.
2. Blend in batches until smooth and slightly chunky, to your liking.Serve with fresh coriander leaves.
