Ingredients:
Pumpkin300 grams,
Job's Tearsseeds 30 grams,
Riceglutinous rice flour(mixed with pumpkin paste as you go),
honeyas desired, oil,
Breadcrust
Steps:
1. Soak the Job's Tears for 20 minutes. Peel and cut the pumpkin into pieces (thickness can vary, thinner slices are easier to steam).
Steamuntil soft or until tender (remove the pumpkin when it is cooked and continue steaming the Job's Tears), mash the cooked pumpkin while the Job's Tears are also cooked (no need to mash the Job's Tears), mix the pumpkin paste with Job's Tears seeds and honey.
2. Mix in
glutinous riceflour, mixing the pumpkin paste as you slowly add the glutinous rice flour until a non-sticky dough is formed.
3. Divide the dough into small portions, take one portion and knead it round then flatten it.
4. Coat both sides with bread crumbs,
in a panbrushed with cooking oil, place the pumpkin
cakesand fry over low heat until golden on both sides (since the pumpkin paste and Job's Tears seeds are already cooked, do not fry for too long).
