First wash the fish head,
clean it, and slice open the fish head to pour some cooking wine inside.Slice ginger and marinate the fish head with it for a moment.
Half a bottle of chopped chili pepper can be placed on top of the fish head.Place a layer of chopped chili peppers on the fish head,due to the saltiness of the chopped chili peppers, steam it after the water boils.
When you see steam rising, put the fish head in the pot and steam for 20 minutes.After the fish head is steamed, discard some of the excess broth.
Sprinkle some green onions on top of the fish head,
and pour hot oil over it.As the chopped chili pepper is quite salty, wait until steam appears before placing the fish head in the pot to steam for 20 minutes.
Steamsteam the fish head after steam comes up again.
After the fish head is steamed, you can pour out some of the excess steam water.
Sprinkle with chopped green onions, then drizzle with hot oil and serve.
