Ingredients:
Thighs from chickenSeasonings: sugar, salt, light soy sauce,
Gingerpowder, cooking wine, old dark soy sauce,
Tspine seedsand toasted white sesame seeds, dried red chili peppers, scallions, ginger, and garlic.
Steps:1. Clean the chicken thighs and cut them into small pieces; slice the scallions and ginger and mince the garlic.
Marinate the chicken thighs in a bowl with cooking wine, salt,
Soy Sauce, sugar, ginger powder for 30 minutes.
2. Heat oil in a wok or large pan; add slightly more oil than usual and fry the chicken pieces until they are dry and fragrant; remove them from the pot.3. Heat another portion of oil in the same wok; add ginger, garlic, scallion segments, dried red chili peppers, and tspine seeds to sauté for 2-3 minutes.
4. Add the chicken pieces back into the wok, continue frying for 5-6 minutes.If you prefer a slightly saltier taste, add a small amount of soy sauce but do not use too much.
Finally, sprinkle with toasted white sesame seeds and fry for another 1-2 minutes before serving.
Reheat the oil in a wok, add ginger, garlic, scallion segments, dried red chili peppers, and Sichuan peppercorns, and stir-fry until fragrant.
