How to Make Sweet and Sour Kidney Beans

Cooking materials (for 3 people)

Ingredients:

TrianglesPuffed beans(170 grams),Onion(half a piece) and Garlic (3 cloves)

Seasonings:

Salt (one-fifth tablespoon),Sugar(two tablespoons),White vinegar(two tablespoons),Tomato sauce(six tablespoons) and Cornstarch (half a tablespoon)

Steps:

1 Cut puffed beans into triangular shapes;Wash onion, then cut it into strips;Chop garlic cloves into;Mix half a tablespoon of cornstarch with three tablespoons of water to form starch slurry.

2 Heat up the wok with two tablespoons of oil, add onion strips and chopped garlic, stir-fry until onion softens.

3 Pour in one cup of water, add salt (one-fifth tablespoon), sugar (two tablespoons),white vinegarand tomato sauce six tablespoons, stir well until the liquid boils.

4 Add puffed beans and stir continuously to coat them with tomato sauce, cook on medium heat for two minutes to slightly puff up and flavor the beans.

5 Once the liquid is thickened, pour in starch slurry to thicken, then serve immediately.

Tips

1 Puff beans should be stirred frequently after being added to the pot to coat them with tomato sauce;Puff beans can be cooked until they are flavorful while maintaining their crispy texture,if you prefer softer puffed beans, cook for a longer time.

2 Soft onions will add a sweet taste that balances the acidity of the tomato sauce, enhancing the overall flavor.

3 The acidity and sweetness of different brands of tomato sauce vary, so season to taste by adding tomato sauce and sugar,

until the flavor is balanced before stopping.4 Since puffed beans are fried food items, they easily absorb water during cooking; initially add enough water then cook the beans. Once the beans are cooked, pour in starch slurry to thicken the liquid so it can coat the beans well.
