沿海水糍
简介
水糍是惠东沿海人春节必做的“年糍”。它风味独特,很受当地人的喜爱。
享用方法:
食时切成小块,可煎可炒,咸甜随意。
时下沿海人的吃法是:在煎好的水糍里拌上用鲜肉、鳗鱼、虾仁、香菇、芹菜、蒜仔等炒成佐料一起吃,味道独特。
做法
它的基本制作工序如下:
将糯米用清水浸透洗净、用饭甑蒸好后,放在舂臼中不断地翻滚槌打,直至将糯米饭打得均匀、细腻,然后取出,做成每个一斤左右的“大饼”
。此水糍因为是糯米饭做成,干后易裂,所以保存时要放在水中浸泡,几天要换一次水,可保存数月。
