Instructions
1. Cut the eggplant into chunks and finely chop the garlic, red bell pepper into circles, and chop the five-spice pork (make sure there is some fat in the pork). Cut the green onions and ginger into pieces.
2. Heat oil in a pot until it's about 80% hot. Fry the eggplant until golden brown, then remove it.
3. Add a little oil to the pot, and sauté ginger, green onions,Red bell pepperAdd the chopped garlic and stir-fry until fragrant. Then add the minced pork and stir-fry until it changes color, then add light soy sauce and stir-fry evenly.
