1. Beat an egg in a small bowl, add a little salt and water, and mix it. Cut the green onions into pieces and set aside.

2. Pour a suitable amount of oil into the pot. After the oil is hot, pour in the beaten eggs and stir-fry over low heat. Turn the pot while holding the handle to ensure that the eggs are evenly coated with oil. Continue frying until the beaten eggs are coagulated.

Tips

1. Since squid, doubanjiang and light soy sauce all contain salt, you don't need to add extra salt.

2. When cutting the fish, make sure to cut the inside of the fish body. If you cut the outside, it will curl up.

Add appropriate amount of soy sauce, stir-fry for 1 minute, then add a little sugar and stir-fry until evenly combined.

Tips

1. Because squid contains salt, and both soy sauce and doubanjiang contain salt, so no need to add salt.

2. When cutting fish, cut inside, not outside, so it won't curl.
