Wǔhé (Clam)Also known asMud clams...and other clams, are common seafoodingredientsespecially in coastal areas.In fact, they are also common inland, and can be bought in many places. Clam recipe: Steamed Clam Eggs

Method steps
1. Soak the clams in diluted salt for half a day, wash and drain before using;
2. Place the washed clams in boiling water to parboil until they open, then drain and rinse;

Ingredients preparation
Clams 500g,Red bell pepper2, green bell pepper 1, salt to taste, scallions,Ginger,cooking wine,light soy sauce,sugar, sesame oil.
Method steps
1. Soak the clams in diluted salt to remove sand;
2. Boil water in a pot, add clams, cook until they open and rinse with cold water;
3. In a frying pan, heat oil and sauté scallions, ginger, andchili peppers, then add cooking wine, salt, and sugar;Then pour in (liao jiu - rice wine), add salt and sugar;
4. Then add light soy sauce, and stir-fry with sesame oil before serving.
Tips
The cooking time for clams should not be too long to avoid the meat becoming old.

Ingredients preparation
Clams, loofah, red bell pepper,Cilantro,white pepper, chicken broth, ginger and garlic, salt.Method steps
1. Boil water in a pot, add washed clams, and cook in (Sha Jiu - Shaoxing wine), remove and cool, and reserve the meat;
2. Cut the loofah into thick slices, mince the garlic, and cut the red bell pepper into strips, and mince the fresh ginger and cilantro.
3. Arrange the loofah slices, place the clam meat on top, and steam for 5 minutes over low heat, then sprinkle with red bell pepper slices;
4. Heat a small amount of oil in a frying pan, add minced ginger and garlic to sauté, then add salt, white pepper, and chicken broth, and stir well. After the clams are cooked, pour them over and sprinkle with cilantro.

2. Heat oil in a frying pan and sauté chili sauce, then add ginger and half of the scallions and garlic, and add water to boil;

How to clean clams
