炸带鱼怎么做
食材准备
带鱼3条(约750克),葱姜片10克,盐3克,味精1克,料酒10克,干淀粉75克,花椒盐5克,植物油1000克(实耗50克)。
方法步骤
1.将带鱼洗净去内脏,剁成7厘米长的段,放入大盘中,加入盐、料酒、味精、葱姜片腌制入味。
2.将腌制入味的带鱼蘸匀干淀粉备用。
3.炒锅置旺火上,加入植物油,烧至七成热时放入带鱼,炸至金黄色时捞出,待油温升至八成热时再复炸一次。捞出摆放在盘中,上桌时撤上花椒盐即可。
小贴士
带鱼应复炸;初炸油温七成热,复炸时油温略高,时间要短。
