It is also known as xiong fan.Bear paws are the feet of black bears or brown bears, dried after processing.Bear paws usually come with skin and hair, distinguished by front and back paws.The front paw is often smaller, about 15~20 centimeters long, with distinct palm patterns, rich in gelatin, a wider surface, milder meat flavor, and a slightly fishy smell but not stinky.The back paw is longer, around 20~30 centimeters, less distinctive in palm patterns, narrower in surface, with a slightly more fishy smell than the front paw, of inferior quality.Bear paws are primarily produced in Heilongjiang, Jilin, Yunnan, Sichuan and other places.Hunter captures them mainly in winter or spring. After catching, remove the feet and air-dry under good ventilation.The best quality is large, thick, dry, with a slightly fishy smell but not stinky.Bear paws have long been considered a delicacy, often used as premium dishes in high-end banquets.
